Ingredients:

For the Crust:
  • 1 and 1/2 cups (150g) graham cracker crumbs
  • 1/4 cup (50g) granulated sugar
  • 1/2 cup (115g) unsalted butter, melted
For the Filling:
  • 4 cups(900g) cream cheese, softened
  • 1 and 1/4 cups (250g) granulated sugar
  • 1 cup (240ml) sour cream, at room temperature
  • 2 teaspoons vanilla extract
  • 4 large eggs, at room temperature
  • 2/3 cup (160ml) heavy cream
For the Topping (optional):
  • Fresh berries
  • Fruit compote
  • Whipped cream

Instructions:

For the Crust:
  • Prepare the Pan: Preheat your oven to 325°F (163°C). Grease a 9-inch (23cm) springform pan with butter or non-stick spray.
  • Mix the Crust: In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated.
  • Press the Crust: Press the crumb mixture into the bottom of the prepared springform pan, spreading it evenly and pressing firmly with the back of a spoon or the bottom of a glass.
  • Bake the Crust: Bake for 10 minutes. Remove from the oven and set aside to cool while you prepare the filling.
For the Filling:
  • Beat the Cream Cheese: In a large bowl, beat the softened cream cheese on medium speed until smooth and creamy, about 2-3 minutes.
  • Add Sugar and Sour Cream: Add the granulated sugar and sour cream, and beat until well combined. Mix in the vanilla extract.
  • Add the Eggs: Add the eggs, one at a time, beating on low speed after each addition just until combined. Do not overmix.
  • Add the Cream: Gradually add the heavy cream, mixing on low speed until combined and smooth.
  • Pour the Filling: Pour the cheesecake batter over the cooled crust, spreading it evenly.
Bake the Cheesecake:
  • Prepare a Water Bath: Wrap the bottom of the springform pan with aluminum foil to prevent water from leaking in. Place the springform pan in a large roasting pan. Pour hot water into the roasting pan until it reaches halfway up the sides of the springform pan. This water bath helps prevent cracks in the cheesecake.
  • Bake: Bake the cheesecake for 75-90 minutes, or until the center is set but still slightly jiggly. The edges should be slightly puffed and golden.
  • Cool in Oven: Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour to cool slowly.
  • Refrigerate: Remove the cheesecake from the water bath and let it cool to room temperature. Then refrigerate for at least 4 hours or overnight.
Serve the Cheesecake:
  • Remove from Pan: Run a knife around the edge of the cheesecake to loosen it from the sides of the pan, then remove the sides of the springform pan.
  • Add Toppings: Top with fresh berries, fruit compote, or whipped cream if desired.
  • Slice and Serve: Slice the cheesecake and serve chilled.
