Ingredients:

Instructions:

Step 1: Prepare Khoya
  • If using store-bought khoya, grate or crumble it into a bowl. For homemade khoya, cook milk on low heat, stirring continuously until it thickens and reduces to a solid consistency. Allow it to cool before using.
Step 2: Cook the Sugar Syrup
  • In a heavy-bottomed pan, combine sugar and water.
  • Heat over medium heat, stirring until the sugar dissolves completely.
  • Continue to cook until the syrup reaches a one-string consistency. To check, take a small amount of syrup between your thumb and forefinger; it should form a single thread when pulled apart.
Step 3: Prepare the Khoya Mixture
  • Heat ghee in a separate pan or kadhai over low heat.
  • Add the grated khoya and roast it gently for 5-7 minutes until it becomes slightly golden and releases a nutty aroma. Stir continuously to prevent burning.
  • Gradually add the prepared sugar syrup to the roasted khoya, stirring continuously to combine well.
  • Cook the mixture over low heat, stirring constantly, until it thickens and starts leaving the sides of the pan. This process may take about 10-15 minutes.
  • Add cardamom powder and mix well. Taste and adjust sweetness if needed.
Step 4: Shape and Garnish
  • Grease a plate or shallow tray with ghee and transfer the thickened khoya mixture onto it.
  • Spread evenly using a greased spatula or the back of a spoon, smoothing the surface.
  • Sprinkle chopped nuts (pistachios, almonds, cashews) evenly over the khoya barfi and gently press them down.
Step 5: Set and Serve
  • Allow the khoya barfi to cool completely at room temperature.
  • Once cooled and set, cut into desired shapes (square or diamond).
  • Serve Khoya Barfi at room temperature or slightly chilled. Store in an airtight container in the refrigerator for up to a week.
